That’s a good argument for using a (On)-Off-On DPDT type switch like https://www.aerosportproducts.com/product/flap-switch-2/ so you don’t need to hold the electric flap switch in the up position.
My only experince of electric flaps is Cessna - nothing fast about them.
The thing about manuals is that you can, if you wish, pick a moment either to deploy or remove.
By holding the leaver you can make this action quick or slow.
I cant imagine that sort of control with a any sort of electric motor.
I bow to your Sonex specific experince, if it somehow is diffrent from my speculation.

Yes, flaps are electric. They work very well. Not too fast, not too slow. Trim is electric as well. The trim switch is on the stick.
