Wondering if someone can tell me why the Sonex B uses taper pins in the control stick attachment rather than a thru bolt.

Welcome to the forum. A tube bolt connection, like in my classic A model Waiex, will always have or develop a little slop. The taper pins really make for a snug fit and eliminate that. I have taper pins in my mixer per the plans.
